My New Obsession

Chocolate.

Cherries.

Oatmeal.

What could be better?

It's not the first time that I've made something that involved the same 3 ingredients - we also have some dark chocolate and cherry granola in our cabinets calling my name.

The morning I baked these was a lazy kind of morning, and I invited my friend Stefanie over for coffee.  Knowing that coffee goes best with delicious baked goods (preferably chocolate, if you're me), I just knew I had to find a muffin recipe that would fit the bill.

Plus, I have all these pretty cupcake papers waiting to be filled with something yummy.

 It's a simple recipe, and I only made a few adjustments.
Double Chocolate Oatmeal Muffins by way of Anne Jisca's Healthy Pursuits
(Makes 12 muffins) My additions are in red.


1 cup oatmeal
3/4 cup + 2 Tbsp flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp baking powder
1/2 cup sugar
2 Tbsp cocoa
1 egg
3/4 cup buttermilk
1/4 cup vegetable oil
1/2 c. dried cherries
1/2 cup chocolate chips

Mix dry ingredients together. Combine egg and buttermilk, blend in oil. Add to dry ingredients, stirring only until mixed. Gently fold in chocolate chips and cherries. Bake at 375F for 15-20 minutes, or until a toothpick inserted in the middle comes out clean.

Once they were done, I served them warm with a nice steaming mug of hot coffee on the side.  YUM.
