I, along with gajillions of other people, eagerly await Pumpkin Spice Latte season. I love pumpkin everything. I started looking for pumpkin puree over a month ago and when it finally made its way to my grocery store shelves, I stocked up. And then I stocked up again the next time I was there. And again. And then a friend bought me some. Ok, it's a sickness. But I read there might be a shortage of pumpkin this year and I do NOT want to be left out in a dark, cold, pumpkin-less patch. Yes I realize that people like me probably make shortages worse. Please accept my sincere apologies for hoarding pumpkin.
There are a ton of pumpkin recipes floating around on Pinterest right now - so I jumped on these recipes from Smitten Kitchen & My Baking Addiction:
I followed each recipe exactly, except I accidentally used an entire 15 ounce can of pumpkin puree in the muffins. I loved it though - it has an amazing pumpkin flavor and is super moist.
