Hummus Among Us

I was talking to a friend recently about hummus.  Yes, these are the exciting conversations I have with the people I enjoy spending time with.  It's sad, but true.  She mentioned how she had made a great batch of black bean hummus and I had a slap my forehead kind of moment.  You know what I mean...the whole, "DUH, why haven't I thought of that??" moment...

We love hummus around here.  I could eat Trader Joe's Chipotle Pepper hummus by the spoonful.  Forget veggies or chips - just give me the container of hummus and a big ol' spoon and I'm a happy girl.  Ok, not exactly - but I swear if it came down to it, I WOULD eat it with a spoon if I had to.

So when she mentioned black bean hummus (another favorite of mine!) I immediately began thinking of places to look for recipes.  I have made regular hummus before, and I'm not sure why black bean never occurred to me but I was ready to tackle it.


These days, I head right to Pinterest for a quick recipe search before I look anywhere else.  What can I say, it's nice to have all kinds of options in one spot.  I found one that fit the bill through MyRecipes.com.

I followed the recipe almost exactly - I omitted the jalapeno because I didn't have one at home and let's face it, I'm a total wuss when it comes to spice.  Ask Jamie - I have memories of a runny nose and watery eyes over a delicious but spicy black bean burger at her house one time...


Spicy Black Bean Hummus
Ingredients
1 garlic clove, peeled
2 tablespoons fresh lemon juice
1 tablespoon tahini (roasted sesame seed paste)
1 teaspoon ground cumin
1/4 teaspoon salt
1 (15-ounce) can black beans, rinsed and drained
1 small jalapeño pepper, chopped (about 2 tablespoons)
Dash of crushed red pepper
2 teaspoons extra-virgin olive oil
Dash of ground red pepper

Directions

Place garlic in a food processor; process until finely chopped. Add lemon juice, olive oil, tahini, cumin, salt, black beans, jalapeño pepper, and crushed red pepper; process until smooth. 




Serve with veggies, chips, pita...or heck, just scoop with a spoon and shovel directly into mouth.  You can thank me later...
