Dreaming of Pot de Creme

Have you ever had one of those days that just will not end?? Today is that day for me. Macie decided to not nap and to fight going to bed and pretty much fight me all day... please tell me I am not the only one that has a child like this. Please. Anyway - after a fun filled day and night, I decided to reflect on a happier time and share that with you. I need an escape. A big fat escape.

A couple weeks ago I decided to try out this fun little recipe I had seen for Pot de Creme (sounds fancy right?)

Keeping in mind how I am constantly making sure that I'm no Martha, I found it humorous that this recipe came from Martha. I somehow picture her in her huge estate eating this fancy-dancy pot de creme as she whips up some impossible craft. 

I was not as fancy and I didn't just throw them together (though they aren't as hard as I thought they would be), and wait for it.... I didn't change one thing in this whole recipe. I know - I was shocked too! They came out perfect. You really need to chill them before you eat them to get the full effect of the richness and smoothness, but I was curious and ate one not as chilled and it was still pretty tasty. I will give this disclaimer. I am not a big fan of chocolate, mostly because it's so sweet, but these little pots weren't too sweet and they were super chocolaty and rich. If you are like me, use your little ramekins because you won't be able to finish a big one. If you love rich chocolate stuff, make it in a tub - you'll eat it all.
