Bread for Packing

Here is my advise of the day: Don't move. Wait, that doesn't sound right. You can move around, just don't move houses... ever. Okay, that may be a tad extreme so how about this? If you have to move then just pack everything in your closet and drawers without asking questions or deciding that it is the perfect time to sort. You ask why I am giving this advise??? Because I'm a moron and didn't follow it myself. There is nothing like sorting through all the various sizes and styles in your closet to give a girl a big ol' pick-me-up in her day. I'm lying. It's horrible. If I were not in a packing frenzy right now and I were way way braver of a person I would take you on a photo fashion show of some of the gems I have found tucked away in my closet. Scary stuff friends, scary stuff. After doing about three or four turns of horror in the closet I decided it was time for a break. I couldn't take it anymore and I came out of the closet.... and made some bread. Yup. Nothing like drowning your fashion sorrows with some carb loading. MMMMM... bread.

I have tried my hand at the no knead bread craze before and had pretty good results so when I stumbled on this pin from Simply So Good with a variation on the recipe and a ton of tips on different bread varieties, I jumped at it. Well, that and I have some ingredients that need to get out of my pantry this week... details details. 

The basic recipe only uses white flour, but I really wanted some wheat bread so I decided to make a few changes so I could get some delicious wheat bread. This bread is so easy to make, its not like that old school bread your mom made that took all day and you had to knead it forever and ever. It also doesn't have an annoying hole in it the way bread maker bread does (do people still use bread makers?) Keep in mind friends, I'm in the middle of a move and I could make this bread - SO Easy. Basically, you mix all the ingredients in a bowl and let it rise for like 12-16 hours. Heat up the oven, throw the dough in your dutch oven and bake it. That's it. I will give you this one word of warning. If you have happen to have a table in your kitchen that you mod podged years ago (what? that's only me?), don't sit your hot dutch oven onto it so you can take a picture of your fancy bread. 


You may not be so pleased with the results when you lift the hot dutch oven off the aforementioned mod podged table. Just sayin'.

You know you want some. It was so good. I say was because Macie and I chowed through this bread. We had it with cheese, with apple butter, with chutney. Yup, we ate a ton of bread. Simply So Good has a ton of variations that I want to try. I think the top of my list is jalapeno cheddar and rosemary lemon gruyere. Isn't you mouth watering a little bit? Time to bake some bread. Get on it!!

No Knead Crusty Bread - printable version
adapted from Simply So Good

2 cups unbleached all purpose flour
1 cup whole wheat flour
1 3/4 teaspoons salt
1/2 teaspoon yeast
1 1/2 cups water

In a large mixing bowl, whisk together flour, salt and yeast.  Add water and mix until a shaggy mixture forms.  Cover bowl with plastic wrap and set aside for 12 - 18 hours (I did 16 hours).  Overnight works great.  Heat oven to 450 degrees.  When the oven has reached 450 degrees place a cast iron pot with a lid in the oven and heat the pot for 30 minutes.  Meanwhile, pour dough onto a heavily floured surface and shape into a ball.  Cover with plastic wrap and let set while the pot is heating.  Remove hot pot from the oven and drop in the dough.  Cover and return to oven for 30 minutes.  After 30 minutes remove the lid and bake an additional 15 minutes.  Remove bread from oven and place on a cooling rack to cool (if you can wait that long!
