Easy Oatmeal for a Crazy Week

It's official... we are in NC!!! YAY! Note to self, never move again. ever. Wait, we have to move again in a month. crap. I feel like this past week was a blur of boxes and chaos. Poor Macie is so confused, she has no idea what's going on. Hopefully all the chaos won't be what scars her for life, I'm sure her teenage years will do that. 

During the last week of chaos and trying to clean all the randomness out of the pantry and fridge, I realized (to my amazement) that I had almost everything to make the overnight oatmeal from The Yummy Life that seems to be a Pinterest sensation. 

I am not the hugest fan of oatmeal (grits, that's a different story!) so I wasn't sure how I was going to feel about this oatmeal concoction. I gathered everything up anyway and went to making this magic oatmeal. Okay, it's not magic - I don't want to be misleading - it is easy though!

I took these fun step by step pictures for you so that you can see all of the things in the oatmeal but then I realized that the pictures make it look hard and time consuming and I promise, it's not. Remember how I said I had "almost everything"? I didn't have chia seeds (yeah I know, who doesn't have THOSE in their pantry??), but I did have some raw almonds that I wanted to get rid of. I also lacked the almond extract, but I had vanilla so I subbed them out. The end result of all of this mixing and subbing... quite yummy!! I think it's the perfect make ahead breakfast, especially as its getting warmer out and you don't always want a hot breakfast. I can't wait to try some other variations on this. I want to use some fresh berries or maybe some peaches...YUM!!!! 


Easy Overnight Mango Oatmeal
adapted from The Yummy Life

1/4 cup uncooked old fashioned oats
1/3 cup skim milk
1/4 cup low-fat Greek yogurt
1-2 teaspoons chopped almonds
1/4 teaspoon vanilla extract
1 teaspoon honey, optional (or substitute any preferred sweetener)
1/4 cup diced mango  - or your choice of fruit

Directions
In a half pint jar or container, add oats, milk, yogurt, almonds, vanilla extract and honey. Put lid on jar and shake until well combined. Add mangoes and stir until mixed throughout. Return lid to jar and refrigerate overnight. Eat chilled.
