Pina Colada Popsicles

I used to be obsessed with New Kids on the Block back in middle school...(does that make me totally old and lame?)  I was head over heels in love with Jordan Knight, and spent many hours listening, swooning and daydreaming about the moment when I would meet him and he would SURELY fall in love with me.  It was just a matter of time until I became Mrs. Knight and I knew he'd feel the same as soon as our eyes met.

Ok, ok...what can I say?  I was 12 and it seemed completely logical at the time.  I bet some of you even had similar day dreams about them...or the Backstreet Boys....or N'Sync...

You're wondering what Pina Colada popsicles have to do with New Kids on the Block, aren't you?  Well if you were a hardcore fan like myself, you might remember a little song called Popsicle from their first album sung by none other than Joey Joe McIntyre.  When I was photographing these popsicles, I was definitely singing this song at the top of my lungs and dancing around my kitchen.  Probably not the best idea since popsicles are touchy little things when it comes to photography and I needed to focus and move quickly.

Anyway, I am a huge fan of summer (I would live in Florida if my husband would come with me...) and there is nothing that says summer quite like a popsicle.  In fact, I'm a little ashamed to admit that I could almost exist solely on Flavor Ice popsicles if I wouldn't die of malnutrition.  Since Flavor Ice popsicles are not the most nutritious of summer treats, I was excited to see this come through my Pinterest feed the other day:

It sounded simple, refreshing and delicious - and since we are doing the no sugar, no dairy thing around here, it was a perfect popsicle for me to make.  I had everything I already needed, except for pineapple which was easy to get - and I got to work.  You literally just toss everything in a blender (my Ninja did this in 4 seconds flat) and pour into popsicle molds.  Freeze, and enjoy.

The end result is a really light, subtle flavor that would be great for one of those sickeningly hot days where it's too miserable to do anything but float in a pool and drink water or cute little drinks with umbrellas in them.

- 1 can pineapple, with juice
- 1 banana
- 1 can coconut milk
- 1/2 tsp vanilla
- 2 Tblsp ground flax meal (I threw this in at the last minute for a little added nutritional boost, but it's totally optional)

Blend and freeze!
