A Little Greek Pasta ... Salad


The other afternoon Miranda and I were having our usual g-chat conversation and the topic of dinner came up. We both knew we had to make it and we both knew that it meant that we would have to go grocery shopping.... a dreaded task with a toddler (something we both accessorize with regularly). We were both lamenting about having to go to the store when I sent Miranda a link for what I really wanted to make for dinner -- a greek pasta salad. I had been double tabbing and scanning Pinterest while we were g-chatting (no that's not rude) and came across a pin from Mele Cotte. It looked so light and refreshing that I thought it would be great to have for dinner. Never mind that I only had about one of the ingredients for it - why bog me down with the details?? I sent the pin to Miranda and told her that was what I wanted to make for dinner and she was all " OH, I think I want to make that too! And I'll grill some chicken for Todd." That seemed like a great idea so I planned carefully and waited for Allen to get home from work and sprinted to the store to get my needed grocery list. Guess who I saw in the check out line? Yup - Miranda had beat me to the store and was checking out with her bounty. 

Let me cut this long, rambling story short. I made the pasta salad and it was SO good. I ate a ton of it. I couldn't find the Lasagnette noodles so I grabbed some Farfalle and it worked for me. It was super quick to mix up the dressing and ps - I used it as the marinade for the chicken and it was delish. While the pasta was cooking I mixed the dressing and chopped up all the veggies - yum.


The salad is really supposed to sit for a little while before you eat it but since I was a little (okay, a lot) behind with the whole dinner planning, we ate it without letting it sit. The next day however, I had some for lunch and it was even better. I know - it was hard for me to believe too. You need to make this salad. Besides using an assorted variety of cherry tomatoes (notice the yellow tomatoes in the picture) and adding some extra cucumbers and switching some pasta, I followed the recipe to the letter so go over to Mel Cotte and grab it.
