Snickerdoodle Bars


Hey friends! Are you doing any Christmas baking? When I was a kid we used to make a lot of Christmas cookies and they would fill all these old tins with wax paper separating the layers of deliciousness. I always said that when I had kids I would have bake cookies too but here's the thing - we don't give Macie a lot of sugar. Stop cringing at me,  the girl LOVES sugar so she gets it as a special treat. Here's the other issue with baking a ton of Christmas cookies - Allen and I don't need to eat them, to be specific, our waistlines don't need it. A couple days ago, even with all of these things in mind, I had the urge to bake and get into some Christmas spirit.
 

I've been eying a recipe for snickerdoodle bars from Lovin' From The Oven for awhile now. I love snickerdoodles and I love the idea of bars so when the itch for baking came, I decided it was time to attempt these little beauties.

I have to pause and say that Lovin' From The Oven said that she found this recipe really sweet - I disagree. I don't love overly sweet things and I didn't find these too sweet. Saying that, I also used an organic light brown for my batch and she may have used a dark brown - I really don't know!

These bars are delicious. I loved them. I brought them to a friend's house so that Allen and I didn't eat all of them because I easily could have. I think I am going to add these bars to my future Christmas cookie list because let's face it, I will cave and start to make cookies and fill tins so our kids have some good sugar filled Christmas memories one day.

Snickerdoodle Bars
adapted from Lovin' In The Oven

2 2/3 cups  flour
2 tsp baking powder
1 tsp cinnamon
1/4 tsp ground nutmeg
1 tsp salt
2 cups light brown sugar
1 cup softened butter
2 eggs, at room temperature
1 tbsp vanilla extract
2 tbsp white sugar
2 tsp cinnamon
a pinch turbinado sugar

Preheat oven to 350 degrees F. Lightly grease a 9x13 pan. Combine flour baking powder, cinnamon, nutmeg, and salt and set aside.

In a large bowl, beat together butter and brown sugar for 3-5 minutes. Add in the eggs one at a time, then the vanilla, and beat until smooth.

Stir in the flour mixture until well blended. Spread evenly in prepared pan. Combine the granulated sugar, cinnamon, and turbinado sugar in a little bowl. Evenly sprinkle cinnamon sugar mixture over the top of the batter.

Bake 25-28 minutes or until surface springs back when gently pressed. Cool before cutting. Makes 20-24 bars.
