"Detox" Kale Salad


I am happy to say I have completed my 21 Day Sugar Detox plan - as you read this, it will be day 22, which means I'm officially finished.  So...how do I feel?

Great.  Down 9ish pounds, and I feel more energetic, less lethargic and less puffy.  And it is incredibly cool to realize that I was able to complete the program.  If you have ever read or researched the effects of sugar and how much of our food supply contains sugar, you can hopefully understand and appreciate why I'm excited about finishing this!

But - if you aren't up for a 21 day detox program, this is a fantastic salad to help recharge your body and fill you with nutrients.  It comes from one of my favorite blogs, Oh She Glows.


This salad is full of awesome ingredients -
  • kale: great for detox and weight loss (to name just a few of the benefits!)
  • cucumber: contributes to great skin
  • peppers: rich in vitamins A, C & K
  • celery: contains high amounts of vitamin C & is a diuretic
  • carrots: healthy skin, gums and great eyesight!
  • tomatoes: help regulate blood sugar
  • avocado: full of Vitamin E and rich in folate
  • chia seeds: help keep you full!
  • lemon (dressing): anti bacterial, anti viral and immune boosting powers 
  • almonds: a good, healthy fat & also helps to regulate blood sugars
  • macadamia nuts: another healthy fat, fiber and vitamin B
See how great this salad is for you?  The above benefits aren't even the only things each ingredient will do for you - I just narrowed down the list!  I tweaked this salad recipe a little from the original since I didn't have the exact things she did, but it still turned out delicious.

Gather the above ingredients.  Wash and pat dry all your veggies, dice and chop cucumber, peppers, celery, carrots, tomatoes, & avocado.  

The best way to prepare kale for salad is to remove the woody stems from the leaves.  Wash and dry your leaves.

Make your dressing:
  • Juice of 2-3 lemons
  • 1/4 cup tahini
  • 1/4 cup extra-virgin olive oil
  • 1/4 tsp of garlic powder
  • sea salt & black pepper to taste
In a small mixing bowl, make the dressing by whisking together the tahini, extra virgin olive oil, lemon juice, garlic powder, sea salt, and black pepper. 


Throw kale & veggies into a bowl and toss with lemon tahini dressing.  Let your salad marinate for at least 15 minutes in the fridge before eating.  This softens the kale a little and mellows out the bitter flavor kale sometimes has.  



When I took my salad out of the fridge, I topped it with avocado, chia seeds, chopped raw almonds & macadamia nuts.

There you have it - a delicious, healthy and hello - GORGEOUS - looking salad that will keep you feeling full, energetic and will shock your body with nutrients.  Can't get any better than that, right?
