Some Homemade Dough

Remember back around New Years Miranda and I were talking about resolutions and mine was to get better organized. I have to tell you, I've fallen short on most areas of organization in my life lately. Pregnancy and a toddler have proved to be a challenge - mostly because she can outrun me without even trying and laughs as she does it! The one area that I have managed to organize some is food. I've been working on meal planning to see if it would save us money and go to the store less... because honestly, who wants to spend their life in the grocery store with a 2 year old. Not this girl.

For this stint of meal plans, I decided to try my hand at making all of my baked goods to see how hard it would be to do it every plan. One of the items on my list was homemade pizza from KidSpot and I have to tell you - if all of the baking is this easy, I'm all in. This pizza dough was a snap. Seriously.

I read a lot of reviews and there were tons of people that complained about it but I swear - it worked perfectly. I think the big thing with this is you have to use real greek yogurt, don't use the greek-style or the fake stuff. Buy real greek yogurt. Also, don't trust my pictures -- I couldn't find my real camera so I had resort to the Iphone. Not my finest work.

Pizza Dough

1 Cup Flour
1 Cup Greek Yogurt (I used 7oz)

In a bowl, combine the flour and yoghurt and bring together to form a ball. I used a mixer with a dough hook.  Turn out onto a floured board to knead and roll.
Knead for 5-8 minutes. Roll into a pizza shape and add toppings.

I baked the pizza at 425 degrees on a pizza stone that was nice and hot.

Allen decided that the pizza needs to be added to the future meal plans. The dough only took a few minutes and the pizza was good stuff. Did I mention this was easy??
