Mocha Milkshake

This is not my usual type of recipe - but I blame a friend with an awesome blender and a freezer full of ice cream.    I had no other choice but to go buy the same blender because I saw firsthand how awesome it was.  And then it was hard to pass up the deal at the grocery store - buy 2 cartons of ice cream, get 3 free.  Say WHAT?  I've been eating coconut milk ice cream, but even I can't pass up 5 cartons of ice cream for the price of 2.

So since I too, have a freezer full of ice cream and a brand new awesome blender, milkshakes have been made a few times this week.

Mostly we've done simple milkshakes like vanilla ice cream and fresh strawberries.  And we've done lots of breakfast smoothies with almond milk, greek yogurt and frozen fruit.

But it's been rainy and gross all day, and I've recently discovered Pretty Little Liars (don't tell me any spoilers!) - and while I'm catching up on past episodes via Netflix I thought a fancier milkshake was in order.

You really can't go wrong with anything involving coffee, chocolate and ice cream.  Right?

Here's what you'll need:

2 c. coffee ice cream (I didn't have coffee ice cream, so I used vanilla and it was still awesome)
2 tsp dutch processed cocoa
pinch of cinnamon
1/3 c. cold coffee
1/4 c. milk
whipped cream and chocolate for garnish (optional)

Put ice cream, cocoa, cinnamon, coffee & milk into blender and blend until smooth.  Pour into glasses and top with whipped cream!  YUM.  Also - please, just never buy whipped cream.  I mean it is so easy to make and have you ever looked at the ingredients in most of the store bought stuff?  Cool Whip is basically oil.  GROSS.  Make the best whipped cream ever by following these simple steps:

Using a chilled bowl and chilled beater attachments, beat 1 c. heavy whipping cream.  Start out slow and build up speed as the cream begins to thicken.  You can add 2 tblsp or so of powdered sugar as you're whipping and 1/2 tsp vanilla extract.  It should take about 3-4 minutes.  Don't overbeat it, or it'll be kind of like butter!  And seriously, that's it.  Ok?  I never want to hear about using whipped cream from a tub or a can again.  GOT IT??  

I mean come on.  This was the best dessert ever, even if I felt like I needed to be rolled up the stairs to bed afterward.
