Some Mixed Berry "Ice Cream"


Let me just start out by saying - yes, I am still pregnant. Really pregnant. Really tired of being pregnant.  I am working on my attitude, but I have to tell you - I went to the grocery store today and parked in one of the "customer with child" spots and the woman pulling out next to me didn't have a child and I wanted to yell at her. THEN another woman pulled into the spot and SHE DIDN'T HAVE A CHILD EITHER! Sorry, I know I'm yelling. I almost told the lady off. That is not like me. I barely ever use those spots but man, I do hate people taking them out of principle but I don't normally start yelling like a lunatic about it. Friends, the hormones are bad. The crazy has set in. Watch out. 


Anyway, on to a happier subject... Ice Cream. I am not a huge sweets fan, but somehow I have produced one toddler that loves sweet stuff and a little lady that is still (ahem) cooking that must like it too. I have wanted more sweets this pregnancy than I've eaten in my entire life. I've even been buying ice cream to eat at night. Along with ice cream, I've been longing for warm weather and farmer's markets. I am ready for fruits and vegetables. All of these longings made me think about my favorite ice cream place - Thomas Sweet's in Princeton, NJ. It's yummy. They do blend-ins, and no, they are not the same as a blizzard or the mix ins from the chain shops -- they are smooth and yummy. I always get the same thing, sweet cream with raspberries. While trying to distract myself from the fact that No Name has decided to stay put forever, I decided to get on Pinterest. Shocking. While there I spied a recipe from Heather's French Press. Immediately I started thinking about what was in the kitchen. Hello! Single Serve Raspberry Ice Cream made out of greek yogurt! It's like she is in my head. 

I happened to have some frozen mixed berries in the freezer so why not give this a whirl?? Yeah, you need to make this. Seriously. You MUST. I'm already debating if I should grab the frozen peaches and make another batch. All you need are these three thing: frozen fruit, greek yogurt and a sweetener. I used maple syrup because honey is too sweet for me lately. I even cut back on the maple syrup - the recipe calls for 1 tablespoon but I went with about 3/4 tablespoon and it was plenty for me. You want to know how to make this don't you?? Here it is...

"Frozen" Greek Yogurt Ice Cream


1 C frozen fruit
1/2 C greek yogurt
3/4 T sweetener (maple syrup, honey, something tasty)

Throw everything in your blender and blend away until it reaches the consistency you want. NOW EAT!

Here's my word of warning - if you don't have an amazing blender, you are going to have to stop and sort of mash and mix a few times. I have hands down, the WORST blender ever. ever. I had to stop and mash three or four times but in the end, it was a.maz.ing. Macie stole it from me while was I trying take some cute shots for you and then cried when it was gone. She even tried to put her face in the jar. No joke. It's a good thing she's two and that sort of thing is still acceptable.
