Roasting Summer Veggies

Hi friends! We are at the beach this week and next and loving our cute little beach cottage with private access to the ocean - this place has everything a beach loving girl could want...except wifi. OOPS. It was the one thing I didn't double check before we rented it. I guess I just assume everyone offers wifi these days but apparently not. Soooo - we will hobble through life for the next two weeks (heh, just kidding - we'll survive!) Please bear with my posts, which I'll be writing on my phone! 


Yesterday was our first full day of vacation and we had seen signs for a local farmers market and I just had to check it out. We were pleasantly surprised by a decent variety of local vegetables, fruits, honey and even kettle corn. I grabbed some summer squash and zucchini, along with a handful of fresh basil. 

Roasting vegetables is so easy and such a hassle free way of adding flavor to your meals. 

Preheat oven to 375 degrees. 

Slice summer squash and zucchini about 1/4-1/2" thick. Drizzle with olive oil, salt & pepper. (Garlic is good too - honestly whatever yummy spices you have on hand!)

Roast in your oven until fork tender, about 10-15 min. 

Garnish with fresh basil. YUM. 



So easy and simple, you can even do it on vacation!
