Bruschetta


Several years ago, we watched the movie Julie & Julia for the first time.  I don't know why, but I LOVED this movie so much I've seen it multiple times since.  I'm not one to watch movies more than once, but I really enjoyed this one.



If you don't know what the movie is about, it's basically about a girl who blogs her way through the Julia Child cookbook, Mastering the Art of French Cooking.  Anyway, there's a scene in the movie where Julie's husband is devouring some bruschetta she just made.  Seriously - this scene is a must watch.  It will make you drool on your keyboard.

 


It is THE most delicious looking bruschetta I'd ever seen and I had to have it.  I spent a lot of time googling the recipe, and since there wasn't an exact recipe for the bruschetta in the film, I read through several until I found one that seemed to be the closest.

I found this recipe at The Hungry Novelist.  I tweaked it ever ever so slightly.



The key to this yummy recipe is frying up your bread in some butter and olive oil.  Oh yeah, I said it.  I'm telling you - the flavor is out of this world.  So are the calories, but eh.  It's worth it.

You'll need:

- your favorite good, crusty bread
- a little butter
- a couple of tablespoons of olive oil
- 10-16 oz of tomatoes, chopped.  I have used rainbow cherry tomatoes and regular cherry tomatoes, roughly chopped
- 1-2 cloves of garlic, crushed
- sea salt
- fresh basil
(serves 2-3)

Toss tomatoes with 1 Tblsp olive oil and 1 tsp sea salt, or to taste.  Add 1-2 cloves of crushed garlic to tomato mixture and let sit.



Heat up a skillet, add 1 Tblsp of olive oil.  Spread a thin layer of butter on each side of bread and add to the pan.  Cook until bread is browned on one side, and turn.  You may need to add more olive oil through this process.  You can sprinkle garlic powder or spread fresh garlic on top of the bread too if you're a big garlic fan.


When bread is done browning, top with tomato mixture and freshly chopped basil.  DIG IN.  Seriously I am wanting to make this again right now.
