Homemade Cookie Ice Cream Sandwiches


Back in the day ("the day" being high school), I used to buy a chipwich at lunch almost every day. Yes, I am hanging my head a little as I admit to this. A side salad with a chipwich, the lunch of winners. To this day I have a soft spot in my heart for the chipwich, though I don't know why. One night while making a late night diaper run, Allen happened upon the ice cream section (I'm sure it's right next to the diapers) and brought home a couple chipwiches. It was at that moment that I realized one thing --- they are not that great. They aren't the best cookie and they aren't the best ice cream. BOO. As we sat and ate our inferior ice cream Allen thought for a second, looked at me and says "You should just make these." This got my wheels turning. Enter the huge chocolate chip cookie recipe and a pin.

This is one of those pins that you want to smack yourself and wonder why you didn't think of it before...or is that just me? 

I can't really give credit to whoever originally did this because the pin goes back to weheartit.com but whoever you are - I salute you. Genius. Here's the deal.

I made a batch of my giant cookies but made one change. Instead of doing them as true drop cookies, I rolled them into balls to insure a more uniform cookie. After the cookies cooked and cooled, time for the sandwich. 


First excuse the pictures, it was late and the camera was dead so it was Iphone to the rescue. Okay so here's the deal. The pin suggests using a pint of ice cream but my cookies were HUGE so Allen bought a quart. Wow. Let your ice cream thaw just a little and then cut the pint in half. Once you've done that, just keep slicing the ice cream container and put the slices onto your bottom cookie. After it's on your cookie, take the cardboard off, add your top cookie and bam, the perfect homemade chipwich.


These are so giant that I can't eat a whole one. I've had to cut them in half. Perhaps that's a hint that we should stick with smaller cookies and pints of ice cream. Lesson learned... maybe.
