Peanut Butter Oatmeal Chocolate Chip Cookies

Peanut Butter.

Oatmeal.

Chocolate Chip.

Cookies.

That's basically everything that's right with the world, isn't it?  I mean how could you even improve on a recipe that includes peanut butter, oatmeal and chocolate chip?  It's basically perfection in a cookie.


So before I get started let me just say that I took a lot of lovely pictures of these even lovelier cookies but somehow something got a little crazy up in here and only ONE transferred off my SD card to my computer and the rest were deleted.  I apologize now for only sharing one photo with you, and I hope you forgive me!


These were amazingly delicious.  Addicting if you will.  I came across this recipe late one night (no seriously, it was like 1:30am)  A little pregnancy insomnia had me scouring Pinterest and getting the urge to bake.  I discovered we were out of eggs, but no worries - applesauce in place of eggs made these cookies really soft and you'd never know they were missing anything.

Peanut Butter Oatmeal Chocolate Chip Cookies Recipe:
(Makes 3 dozen cookies)
Ingredients:
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 cup peanut butter
1 teaspoon vanilla extract
1 egg or 1/4 c. applesauce
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup oats (quick or old fashioned)
2 cups milk or semi sweet chocolate chips

Directions:
Preheat oven to 350 degrees.  In a large mixing bowl, combine butter and sugars.  Stir in peanut butter, vanilla and egg until well combined.  Add flour, baking soda and salt.  Fold in oats and chocolate chips and mix until combined.  Roll into 1" balls and place on a baking sheet.  Bake for 10-12 minutes, or until golden brown.

Mmm, good.  Trust me - these were polished off pretty quickly in this house!
