From the Archives: Chocolate Peppermint Fudge

You know how I love pumpkin in the fall?  Well in the winter I love peppermint.  Peppermint cookies, peppermint mochas, peppermint fudge.

Oh who am I kidding, if it has sugar in it, I'll take it.

It's a fun time of year for us because we generally don't do much if any white sugar or flour for the rest of the year.  Truthfully, I was out of a lot of baking ingredients as I started my holiday baking this year and had to call in reinforcements from Jamie in the form of pleading text messages, "Will you please let me borrow xyz???"



Thankfully she is very good at sharing.

This time of year, my husband's job has a fun little lunch or staff party for Christmas and for the last several years, I make up a tin of goodies to bring to each family.  It's always fun (albeit stressful...I am typing this after midnight...) to find new recipes and treats to try every year.

I'm a serious fudge lover.  Granted, normally I'm all about pure peanut butter fudge - but a chocolate peppermint recipe caught my eye and won me over.

Fudge can be tricky business, but don't worry - this is the fool proof cheating kind.  No candy thermometer, no weird boiling, just simple to follow with simple ingredients.  It's a great fudge for a beginner to try out.



Here's what you'll need:

Chocolate Peppermint Fudge
Ingredients:

2 cups milk chocolate chips
1 cup semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
Dash salt
1/2-1 teaspoon peppermint extract (to taste)
1/4 cup crushed hard peppermint candy


1.In heavy saucepan, over low heat, melt chips with sweetened condensed milk and salt. Remove from heat; stir in peppermint extract. Spread evenly into waxed paper-lined 8-or 9-inch square pan. Sprinkle with peppermint candy.
2.Chill 2 hours or until firm. Turn fudge onto cutting board; peel off waxed paper and cut into squares. Store covered in refrigerator.
