SNOW!!! That's right people we are in the middle snow-maggedon here in Charlotte. Supposedly as the days go on we may even lose power... fingers crossed that's wrong. But in the light of all the white stuff and cold why not make some hot chocolate??? Here's a little bit from the files!!
It's been rainy and cold and grey for the last few days here, and besides feeling like I just want to curl up in a blanket with the fireplace going and watching endless episodes of Veggie Tales with my youngest, I crave something hot to hold in a pretty little mug. Coffee and tea are my go to beverages, which I generally drink without any sweeteners or milk - but every now and then I get a craving for something a little richer and a little sweeter.
But I don't want any of that boxed up from a factory stuff. No, give me the real deal - rich, creamy, chocolatey hot chocolate from my stovetop.
I found this great recipe for one serving at Epicurious
and with a few tiny little tweaks, we were in business.
Here's what you'll need:
- 1 c. almond, coconut or dairy milk (I used almond)
- 1 tsp dutch process cocoa
- 1-2 tsp honey (to taste)
- 1/2 tsp vanilla
- pinch of sea salt
Just combine all the ingredients into a sauce pan, whisk until smooth, and let continue to heat for 3-5 minutes. Pour, and enjoy. Yum.
When it's this easy to make delicious hot chocolate with things you probably already have on hand, why bother with the boxed mixes?! Hot chocolate is one of the easiest things to make and it will taste so much better, promise.
