Easy Pumpkin Dip

This past weekend, my daughter, AR and I went to a Halloween party at her friend's house. When we got invited, I went straight to my Baby G board because I'd remembered that I'd pinned this last year at Halloween when she was only 5 months old. A healthy Halloween snack...oranges with Jack-o-lantern faces drawn on with Sharpie! So easy but I did have to look up what a Jack-o-lantern looked like because for the life of me, I couldn't picture how to draw the mouth!

After I made them, we loaded them up in AR's trick or treat bag. Is it not adorable? AR's Nana made it for her and she loves it...well, she loves to wear it on her head when it's empty.

Then I made pumpkin dip to take with us. I found this recipe on my Get In My Belly board. All you need is a can of pumpkin, Cool Whip, large box of Instant vanilla pudding. The cinnamon sugar and real pumpkin are optional.

Next step, mix all the ingredients together. I feel like it's a little bland so I add the cinnamon sugar for a little bit of sweetness. I also think it's better if you make it the night before you serve it.

My husband cut the pumpkin for me and cleaned out the inside. Then I used it to serve the pumpkin dip! I served it with some graham Teddy Bears.

All the other kids at the party loved the dip! They'd lick all the dip off the Teddy Bears and want more. I think it's safe to say that the dip was a hit at the party and the party was a hit with my little cowgirl!

Fighting Allergies with Kleenex {Toddler Edition}

 Let's just talk about allergies for a minute shall we? If you know me in "real life", you know that I am pretty much allergic to the world. When people ask what allergies I have, I usually say the same thing "if it's alive and not human, I'm allergic to it." You would think that winter would be my favorite season. It's the only time my eyes aren't watering, my throat isn't itching and my nose doesn't become an unending faucet - and let's not discuss how many times I have to answer the question "Are you sick?" in the middle of fall. Due to my unending allergies, there's one thing that I can tell you a lot about --- tissues -- and apparently it's a trait that I have passed onto my oldest child.


Poor Macie seems to have all of the allergies that I have. Right now she is in a hard core battle with her nose. It will not stop running. Her little puffy eyes and runny nose make her look a little pathetic and I feel awful about it. I carry Kleenex Pocket Packs in my diaper bag at all times because of the faucet we call a nose. They fit into the outside pocket or one of the inside slots perfectly and I can usually grab one in time…usually. Oh and they come in cute packages that match my sunglasses, bonus!


Quinn had to go to the pediatrician the other day for a well visit and Macie must have looked particularly sad because the nurse gave her an entire box of hospital grade tissues to hold while we were in the exam room. You know the kind - thin, scratchy, tears when you blow so you need about 15, leaves your nose wondering if you just used sandpaper on it - yeah, those. Macie thought she was hot stuff because she had her "own tissues" until she had to use one. Her nose was running and I told her to blow it so she proudly grabs a tissue. She suddenly made a horrible face and announced that the tissue "feels funny." Yup in that moment my two year became a tissue snob. She dropped the box of sandpaper tissues and asked me for one of mine. She now loves to have a little Kleenex Pocket Pack with her. Never mind that I keep full boxes of tissues all over the house, she needs her own.


This weekend Macie was having a pretty rough allergy bout (and mine weren't exactly a picnic) so I ran to Target and grabbed a hefty supply of Kleenex. … plus they match my bathroom so perfectly! And no, I don't leave my Kleenex on the floor but I wanted to prove that they really do match perfectly. It's like this box was made just for me. Ha.

Hey Everyone!  Hope your Monday is off to a super awesome start.  I am trying to squeak this out before the baby wakes up to eat so forgive the small talk!

Apples Apples and Cake


Apple season is a funny thing, it comes before you're ready for it some times and then (at least here) it's gone before you're ready too! We went apple picking and I felt like we just made it before they were out of apples. Maybe that's the reason that we stock piled.  We came home with SO MANY apples. 

I have been up to my eyes in applesauce and canning with all of the apples. I feel like I became an applesauce factory for the last couple weeks and honestly, I don't think I could make another batch this second if I was forced to... but I still had more apples. Time to improvise.

Today's post is stolen from our archives - originally appearing back in November of 2011.  I'm super busy snuggling my super cute newborn, Declan, who was born Friday morning.  Now that he's here, you'll see a few old posts making a comeback as well as some fun posts from new friends who have offered to help out until I'm ready to get back in the game!

This is one of my all time favorite pumpkin recipes.  When Starbucks busts out the Pumpkin Spice Lattes, I do a little happy dance, so a cupcake that mimics the flavor is a win for me!

In case you can't read that, I said: This is going to be one final post about pumpkin.  (I think) Don't throw anything at me. Or your screen.  I know I have worn out the pumpkin welcome, I KNOW OK??  I can't help it.

Just hear me out.

Pumpkin + spice + cupcakes + whipped cream = heaven

Am I right?


So yeah, I made some Pumpkin Spice Latte cupcakes over the weekend and they were so good.  I mean, SO good.  Soft, moist cupcake topped with a coffee flavored whipped cream frosting and dusted with cinnamon.  Like taking a bite out of Starbucks, and that can never be bad.


When I saw a pin come up on Pinterest, I knew it was fate - and the pin happened to be from Annie's Eats - a blog I already love and use often.

So here you go - my final (most likely...not making any promises...) pumpkin recipe.




Pumpkin Spice Latte Cupcakes
Printable Recipe

This recipe will make about 24 cupcakes

Ingredients:
For the cupcakes:
2 2/3 cups all-purpose flour
2 tblsp instant coffee dissolved in 1/8c. hot water
2 tsp. baking soda
2 tsp. baking powder
1 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/8 tsp. ground cloves
1 tsp. salt
1 (15 oz.) can pumpkin puree
1 cup sugar
1 cup brown sugar
1 cup vegetable oil
4 large eggs


For the whipped cream frosting:

2¼ cups heavy cream, chilled
¼ cup confectioners’ sugar
2 tsp. coffee extract (I found mine at Sur La Table, you can also find it online)


Directions:
To make the cupcakes, preheat the oven to 350°F. Line cupcake pans with paper liners. In a medium bowl, combine the flour, hot water with instant coffee, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Stir together and set aside. In the bowl of an electric mixer, blend together the pumpkin, granulated sugar, brown sugar and oil. Add the eggs one at a time, beating well after each addition. With the mixture on low speed, add the flour mixture in two additions, mixing just until incorporated.

Fill the cupcake liners about three-quarters full. Bake until the cupcakes are golden and a toothpick inserted into the center comes out clean, 18-20 minutes. Transfer the pans to a wire rack and let cool for 10 minutes, then remove the cupcakes from the pans. Let cool completely.

To make the frosting, place the heavy cream and coffee extract in the bowl of an electric mixer fitted with the whisk attachment. Whip on medium-low speed at first, gradually increasing to high speed. Blend in the confectioners’ sugar gradually. Whip until stiff peaks form, being careful not to over-beat. Use a pastry bag fitted with a decorative tip to frost the cooled cupcakes. Sprinkle with ground cinnamon. Store in an airtight container and refrigerate.

Hit or Miss ... and Declan!!

Happy Monday!! It's been a big weekend in our little world because MIRANDA HAD A BABY!! YAY!! I really think that she had decided that Declan had taken up permanent residence and was never leaving, but he decided to come and join the outside world on Friday morning.



Isn't he so cute?? I just was to smooch his little cheeks!

Since Miranda was a little busy this weekend and just you know, had a baby, that maybe she should get the week off of Hit or Miss soooooo, it's just me this week. First up...

My Hit:

I love this bag. I need it. There are days that I pick up my knitting to relax and think exactly this. I do knit so I won't kill people. A while back I brought my knitting with me to the doctor and they made me wait FOREVER. Maybe if I had been carrying this bag they would have thought twice about making me lose hours of my life in their waiting room. Heh.

And my Miss:


What the? I mean really, what can I even say about this? A turtle house?? I find this weird and creepy, I'm not even sure why I find it creepy but I do. Maybe I don't want to live in a house that has eyes. Maybe it's because it's a little too life like. Whatever it is - am I safe in saying this is weird??

I tried to stay away from apples as long as I could but hello, it's fall! I know that last fall I went a tad overboard on the apple recipes so this year I decided not to bore all of you with more... and then.... I found one that I had to make. After I made it, I decided that I had no choice but to share it.
